Rice Porridge or Kanji as known in Kerala is a very simple and comforting food. Rice is cooked with more water than usual to get a fluid consistency. Usually, we prefer to have this combination when we want to recover from any tummy disorder or if we want to have something light and quick for dinner.
Ingredients :
- 1/2 cup .................................... rice / broken rice
- 2 cups .................................... water
- 1/2 cup .................................... grated coconut (optional)
- Salt to taste
How To Make Rice Porridge or Kanji:
1. Wash and soak rice for about 30 minutes.
2. Add rice, water and salt to cooker. Cover and cook for 3-4 whistles.
3. Open the cooker after the pressure releases.
4. Add grated coconut to the cooked rice. Check for salt and mix well.
5. Serve hot with cherupayar thoran, papadam and pickle.
